Dried Vermont Appaloosa Beans are white, slender, kidney shaped beans with an impressive mottled purple splash across one end of the bean, much like the speckled coloring on the rump of the Appaloosa pony. Cooked, this bean has a mild flavor and firm texture and is commonly used in chili, refried, soups, or casseroles. The Vermont Appaloosa Bean can be used to replace Kidney beans, though the Appaloosa Beans are smaller in size.
