Tomatillos, or husk tomatoes, are about one or two inches in size with a papery outer skin. The slightly sticky husk encloses a firm, green fruit with very tart flavor. If left to ripen, the husk splits open and the green fruit fades to light yellow-brown and turns sweeter in flavor.
