Shelling Peas, also know as English Peas, are sweet peas encased by 4-6″ long, inedible fibrous pods. Shell them simply by snapping off the end and pulling the string along the length of the pod to reveal the peas. The peas are sweet and tender yet slightly crunchy. Enjoy them quickly; as peas mature, their sugars turn to starch and they lose their sweet flavor.
