Red Kabocha Squash, or Buttercup squash, is a versatile, squat winter squash. Round with a flattened top, this squash often weighs 2-3lbs but can be larger. It’s bright red skin is edible, though a little tough, and deep yellow-orange flesh that tastes dry and sweet, similar to sweet potatoes. Great for soups, stir fry, or as a substitute for pumpkin, butternut, or acorn squash.
