Red Beets flavor is typically sweet, as beets have a higher sugar content than most vegetables. Their deep red color is from betalain pigment, which aids the body’s detoxification process. Beet greens are edible and have an earthy taste similar to Chard.
Baby beets are smaller and more tender than their larger counterparts. Late in the season, the tops are often removed.
