Only available during the early spring, pea shoots are a more mature version of pea sprouts. These shoots have a delicate crunch and sweet flavor, and are made up of leaves, tendrils, and occasionally buds or blossoms. Use raw in salads, on sandwiches, or as a garnish, or lightly cook them with garlic and add to scrambled eggs!
Pea shoots are best used within a day or two, but they can be stored by wrapping them in a paper towel and storing in an open plastic bag in the refrigerator.
