The majority of Kirbies grown are turned into commercial dill pickles, but at Balsam Farms we also sell them fresh. Cooks prefer using Kirby Cucumbers because of their thin skin, crisp flesh, and tiny seeds. They vary in size but are almost always less than 6″ long.
