Similar to Black Japanese Eggplant, except this variety is bright neon purple. They are long, slender, and straight or slightly curved with glossy skin. The inner flesh is nearly seedless. When cooked, it tastes mild and sweet with a tender, meaty texture. Unlike other eggplants, the Japanese Eggplant’s skin will retain its color after cooking.
